Debbi Fields decided to start a business based on a skill she had acquired as a girl. From age 13 she had baked delicious chocolate chip cookies for her family and friends. She gradually improved the basic recipe pioneered in the 1930s by Toll House.


By the spring of 1981 the company operated 14 stores. At a training session, Debbi Fields was impressed with the fact that each store manager knew which cookies he had baked even when they were mixed up with those baked by the other managers. That experience assured her that the company training was successful.


Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies.


By the late 1970s, this legend had shifted to Mrs. Fields and chocolate chip cookies. Indeed, this version proved so fiendishly popular that in 1987 the following notice signed by Debbi Fields was displayed in her stores:

Tidbits: It's very important that you not exceed the cooking time given above, even if the cookies appear to be underbaked. When the cookies are removed from the oven, the sugar in them will stay hot and continue the cooking process. The finished product should be soft in the middle and crunchy around the edges. For variations of this cookie, substitute milk chocolate for the semisweet chocolate and/or add 1 1/2 cups of chopped walnuts or macadamia nuts to the recipe before baking. Although you can substitute margarine for butter in this recipe, you will have the best results from butter.
