Ron del Barrilito has been aging its rum in Spanish sherry barrels for over a century, since around 1880. Yet, it was only four months ago that the distillery decided it was time to launch a website.
At the end of the tour, you go back to the visitors center, where they have a beautiful bar set up with some very delicious cocktails to try. They also have a store where you can buy all their rums and other Ron Barrilito paraphernalia.
The rum is crafted by master blender Luis Planas, who has made rum in Puerto Rico for more than 40 years. "We would not be here without him," says Bacardi. Planas blends the rum base with macerations of 25 different fruits and spices before the final mix is aged in oloroso sherry casks. "That's where a lot of the sweetness comes from," according to Bacardi.
Rum production at Hacienda Santa Ana's started during the family's third generation in Puerto Rico. During the mid 1860s, Pedro Fernández, one of Manuel's sons, went away to study engineering in France, where he developed an interest in the production of brandies and cognacs.
In the early twentieth century, Edmundo Fernández, one of Pedro's sons, would follow in his father's footsteps as Ron del Barrilito's master blender. The century started with tremendous challenges for the family business. Puerto Rico, by then a territory of the United States, was subject to the 1920 Prohibition Amendment, which made it illegal to produce and sell alcoholic beverages anywhere in the country. Ron del Barrilito, as well as every other liquor and spirits manufacturer in the United States, had to cease operations immediately.

Our hosts, Fernando and Manuel Fernandez, greet us through the heavy morning rain. We say our pleasantries and they tell us more about their unique production process. Today, all of their base rum is sourced from Bacardi and delivered to storage tanks at Barrilito in large tanker trucks. It is then transferred to wooden vats where it is blended with 10 secret ingredients, allowed to aerate and transferred to 130 gallon sherry barrels. Then it is allowed to rest in one of four large aging rooms for a minimum of two years.
